Remembering Yew

It’s almost midnight and here I am contemplating if I should pen down these mixed emotions in me because to be honest, I know nuts about politics and didn’t want to write anything wrong since it is kind of sensitive. Truth be told, I didn’t expect myself to be affected and to feel so much for a person that I have never seen in the entire 26 years of life of my life though what I do know is that Singapore is safe cause he’s got our backs.

Drove to work with a heavy heart and listening to the local radios just made my heart sank further. The atmosphere at work, hawker centers which I frequent for lunch takeaways and even the petrol kiosk seem more dull today. It seemed as though everyone has lost a part of them. I couldn’t concentrate at work at all, my heart was numbed by the pain for reasons unbeknownst to me.  This pain resembled how I felt when I lost my grandma last year. But seriously, I don’t even know you well like how I do with my grandma, how can I even feel so much for a person that I don’t really know in person? All I know is that he is our first Prime Minister and he played a major role in Singapore’s history -_-||| (I know right, don’t judge me.)

So I decided to know more about our dear founding father. Social media made it easier since everyone is paying their tribute on Facebook and Instagram. Almost every Singaporean friends in my Facebook and Instagram shared something about him or articles regarding his life and Singapore. Since I can’t concentrate on work, might as well do something more constructive like reading up on our dear LKY right? (Sorry Boss!) And something caught my attention out of all the articles I read about him: The love story of Mr and Mrs Lee.

Mr Lee Kuan Yew is not only one of the greatest leader in the world but also one of the great lover of all time. Through the articles I read, I was deeply moved by his ability to love so deeply.

They met when they were in college and it was not love at first sight. From competitors, they gradually became lovers. A little like those love drama in the typical old days, the female’s parents came in between the love birds. But despite all obstacles, they managed to overcome it all through their faith. They secretly got married in England and it was quite a bold move considering the conservative mindsets of the people during that era. Since then, their lives intertwined and they spent three quarter of their lifetime together.


His wife’s life revolves around him and their children. She took care of every minute detail in his life and is the woman behind her successful husband. But things took a turn when she suffered her first stroke. He made an effort to make adjustments to his lifestyle despite his busy schedule. He took care of her complicated medication regime. And because she lost her left field of vision, he would sit on her left during meals, reminding her to finish the food on the left side of the plate. He would also meticulously pick up the food that her left hand dropped. He would also urged her to exercise by swimming daily and would measure her blood pressure several times in a day. Even though their daughter got them a watch-like device to measure blood pressure as she preferred having her husband measure her blood pressure.

The second stroke left his wife bed-ridden. He sat by her bed, spending two hours telling her about his day and reading her favourite poems to her every night after work without fail. Since the poetry books were thick and heavy, he used a heavy-duty music stand to support the books. One of those night, he was drowsy and fell asleep while reading poetry to her. He slouched forward and hit his face against the metal-made music stand, suffering abrasions on his face. Despite this, he continued reading to her every night for the next two years till she passed on.

After her passing, he wrote a note to his three children saying – ” For the reasons of sentiment, I would like part of my ashes to be mixed up with Mama’s and both her ashes and mine put side by side in the columbarium. We were joined in life and I would like our ashes to be joined after this life.”

This reminds me of this quote:

”True love doesn’t mean inseparable, it just means nothing changes when life gets tougher.”

a summary of 2013.

yes, i am back blogging. kinda got the feeling to blog my feelings of 2013, hope i got this kinda feeling everyday so i can jot down my life for me to reflect when i am old… lets see!

many things happened in 2013…


1. i found an officially full-time job at a bank – finally working and contributing back to the family which i felt good and not useless anymore.

2. i baked a lot. i did stop baking during the peak period of my bank job but not long after, i resumed baking as i find baking is therapeutic and i am able to find peace.

3. personally, i felt Bakinginthewoods grew up a lot in 2013. from nothing to something. not saying we are really something but you can see our growth and difference if you really trace back! we had constantly improvising the recipes and creating new flavors for our customers. we started from a salted caramel cheesecake to a almost full-fledged catering menu. from individual cake orders to dessert table and event setup. our logo kept changing too, hopefully we can settle down for an ideal design for name cards and future printings. from weekly emails to daily emails and invitation for collaborations. it was really our honor to receive invitation and to know you want us to be part of your event. i am sorry that i had to reject some due to our peak season and wrong timing. our cry goodies which are a hit last year and this year, we launched a new pineapple tart flavor – the cheese pineapple tarts which was a HIT, received a lot of praises for that *happy beams* i hope in the year of 2014, we can do more dessert tables and bring it to another higher level.

4. managed to travel quite abit in 2013. hong kong twice, KL twice, penang twice, ipoh twice, tioman, koh samui & taiwan.

5. quitted my bank job.

6. discovered how much i treasure time alone and personal space. when i was so busy and stressed out with work, i yearned to have some time alone to clear my mind & now i am enjoying my time a lot as much as i can before i am busy again.

7. guilty as charged, i haven attend church for so long.

for a fairytale theme, the couple ordered 200 cupcakes (red velvet, passionfruit meringue cup pies, earl grey lavender cupcakes, banana chocolate and vanilla cupcakes)

the last bits of 2012




































In conclusion of the remaining of my 2012, i baked a lot, travelled to chiangmai & seoul, spent my first white xmas in my life, cafe-hopping in seoul, locked our love at seoul tower, challenged myself with eating live octopus, spent the leftover of 2012 with my loves & of course started a online bakery called bakinginthewoods.

Cookie Monster Birthday Cake


Sorry for the short hiatus, just got back from my Sydney/Melbourne trip last week & it was F1 weekends with lots of other stuffs.

Anyway before i flew to Sydney, it was his birthday. So i gathered some friends (i got a lot of talented friends.), Winifred & Yalin to help me out with this cookie monster themed birthday cake. I am not quite a decorator for cakes but would like to be a pro some time soon so at least my cakes can look pretty too 🙂

For this cookiemonster cake, we baked chocolate sponge cake layers with nutella fillings & buttercream frosting.

& boy, it tasted so good!

You guys should know not all pretty cakes comes with a yummy taste right? haha…

Happy Birthday Habitat Coffee!

Time flies, as cheesy as it sounds, but that’s the truth. 1 year ago, i was working with Ryan, boss of Habitat Coffee, when the cafe just started off. A new cafe started off & a new friendship found. I could still remember those days when we worked till 11pm, so tiring yet happy. So happy that Ryan had successfully opened his cafe, things doing well for him & have inspired me to work towards my dream cafe.

Easy Picnic Food

What will you prepare for picnic if u have less than 12 hours to do so?

& when that 12 hours is inclusive of ur sleeping time, grocery shopping, packing for picnic & preparation of food for 12, what will you do?

To me, SALAD is so simple that it’s always compulsory to make for picnic! But salad full of greens are always not filling at all especially for guys, so i love to make pasta or potato salad instead. I am going to share with u guys my all-time favourite pasta salad here that’s so simple yet so good 🙂

Grilled Chicken Pasta Salad

(how this pasta salad came along was because one fine day, there’s only chicken breasts left in fridge. haha)

chicken breasts

white onion, diced

cooked pasta

diced ham (optional, found some leftover ham in the fridge so i just dumped it in too.)

hard-boiled eggs


italian dressing




1. Preheat the oven to 200 degree C.

2. Marinate the chicken breasts with sea salt, pepper & dried rosemary. Remember to give those breasts a good rub! 

3. Place the chicken in the oven for around 15mins or until cooked. Remove it from the oven & let it cool down completely.

4. Put the cooked pasta, ham, onions, & chicken in a big mixing bowl.

5. Add a few slabs of mayonnaise & 2-3 tbsps of italian dressing into the bowl. (Add sufficient mayonnaise to lubricant the ingredients & italian dressing to lift up the taste of the pasta.)

6. Mix everything in the bowl well.

7. After mixing them , put the pasta in a air-tight container. Place the eggs on top of the salad, cover the container & chill it overnight or at least 2 hours.

Next, SANDWICHES… they are so easy & very hard to go wrong. I usually does egg mayo or chicken mayo for chilled sandwiches cause i can make them the night before. Since i have already made pasta salad with mayonnaise in it, i decided to make another favourite sandwiches of mine, luncheon meat with eggs sandwiches! (the boyfriend loves it too!)

Luncheon Meat with Scrambled Eggs Sandwich

what you need…

Luncheon Meat


Milk ( 1 egg needs 1 tbsp of milk/cream )

Tomatoes, sliced

White Bread

Salt & Pepper ( for the scrambled eggs)

scrambled eggs, sliced tomatoes & my assemble station for sandwiches.

For my luncheon meat, intstead of pan-frying them, i love to throw them in the oven instead. Healthier & most importantly it won’t make the kitchen oily! hehe…

You can put those luncheon meat slices in a preheated oven about 200-220 degree C for around 10-15 mins depending on how u like your luncheon meat to be. If you like it to be juicy, then it don’t put it in the oven for too long. If you prefer your luncheon meat to be crisper, then leave it in the oven longer 🙂

Packed the sandwiches individually with the cute bags we got in cold storage! Nice right? hehe

I think every picnic should have something sweet & cute/pretty food to spice up the whole picnic atmosphere. I have a soft spot for pretty & cute food like cupcakes but it will be too tedious to bring cupcakes with frosting out especially with the weather of Singapore. I think by the time you settle down with cupcakes, you might have melted frosting cupcakes instead. So i decided to make lemorange (lemon + orange)  cupcakes with citrus glaze. Btw, the boy loves it so much that he was the one who requested me to bake this for the picnic.

Lemorange Cupcakes


1 2/3 cups all-purpose flour

2 sticks (250g) salted butter, room temperature ( usually the recipe will call for unsalted butter & salt in the flour, but to save trouble, i will just use salted butter.)

1 cup sugar

5 tbsps finely grated lemon zest

4 tbsps finely grated orange zest (extra zest from either the lemon or orange for garnish on the glaze)

1/2 tsp pure vanilla extract

5 eggs, room temperature

5 tbsps freshly squeezed orange/lemon juice


3/4 cups confectioners’ sugar

2 tbsps fresh citrus juice, such as orange, lemon, or lime


Preheat oven to 170 degrees C. Line standard muffin tins with paper liners.

With an electric mixer on medium-high speed, cream butter and sugar until pale and fluffy, scraping down sides of bowl every few minutes.

Add citrus zests. Reduce speed to medium, and add vanilla.

Add eggs, divide the eggs into 3 parts & add 1 part at a time, beating until until incorporated, scraping down sides of bowl as needed.

Reduce speed to low. Add flour mixture in four batches, beating until completely incorporated after each.

Divide batter evenly among lined cups, filling each three-quarters full; tap pans on countertop once to distribute batter.

Bake until a cake tester inserted in centers comes out clean, about 20 minutes.

Transfer tins to wire racks to cool 10 minutes; turn out cupcakes onto racks and let cool completely.

For the glaze, whisk all ingredients until smooth and combined. 

Finish the cupcakes by dipping tops of cupcakes in glaze, then turn over quickly and garnish with zest.

Cupcakes are best eaten the day they are glazed; keep at room temperature until ready to serve.

The boyfriend’s house doesn’t have muffin tins so this was what we did. haha!

Pasta salad, sandwiches & cupcakes, i am ready for the picnic! This time round, we had a picnic with friends that have dogs & i will let the pictures do the rest of the talking. Enjoy the pictures 🙂

Because of my passion to eat, cook & bake (mainly made up of the eating part), i decided to start a food blog after many of friends asked me to do so & much procrastination. Why procrastinate? Obviously, i am not very good with my words and writing so i would like to put a disclaimer on my first post that please pardon all the wrong sentence structure, grammar & vocabulary. Please read my blog if only you can take my horrible english & loves to eat, cook or bake 🙂

Why the popcorn girl? Because i think popcorn is really cute & i love to eat popcorn. I used to only eat caramel coated popcorn until recently when i chanced upon a pack of microwave buttered popcorn, it changed my perception of salted popcorn. I fell in love with them since then,  a life-changing moment for me. okay, maybe i exaggerated a little.

Someone told me that i need to write a short introduction (as of the title of the entry) about myself as a start of this blog. This didn’t come to my mind initially because i wanna avoid writing too many words. So i thought of a way to let everyone who is reading to know more about me.

#7randomfacts about me:

1. I was a very fat girl (highest weight ever 68kg) when i was young. So by now, u guys should realize that my eating hobby was cultivated since young. I blamed my overweight to my granny who cooks so well & loves to stuff her cooking into my mouth. Thanks god, i managed to slim down (by lots of exercise & healthy eating) when i was secondary 2.

2. I love fast cars. i love the feeling of my body releasing adrenaline & the excitement when one car overtaking another in the least possible way. Friends that are close enough to me should know that.

3. I love vampires & related stuffs ( like exorcism, demon, ghost, supernatural & werewolves…etc.). I started watching vampires movies since young with my cousins. I think vampires are so cool but vampires slayers are even more cool. I still can’t decide if i want to be a vampire or vampire slayer because i love the speed that a vampire possess. But if vampires are coming to this world at my time, i think i will still choose to be a vampire slayer. Oh yes, i am a big TVD’s fan (pro Stefan Salvatore :p)

4. As much as i love to eat a wide variety of foods & open to new foods, there’s one single food that i detest the most. Almost everyone around me loves it except for ME. You can find it everywhere but more common in Southeast Asia. Make a guess…It’s a kind of vegetable and its white in colour. Got it? It’s bean sprout. The name itself turns me off, full stop.

5. I love dogs. I got a cute little shihtzu named pupu (alright, i suspect it’s a shihtzu mixed maltese). I know u guys must be laughing at my dog’s name but there’s a story behind this name. Too lazy to type it down here, haha! You guys will get to see lots of picture of pupu & sox (my boyfriend’s dog) in this blog.

6. My baptise name is Naomi. Naomi means “Beautiful, pleasant, delightful”. Love this name so much that i want to name my future daughter that. Anyway, i am proud to a happy child of God papa 🙂

7. I love the number 7. I don’t know why but i just love the number 7 a lot & that explains why i choose to state 7 random facts instead of other numbers. In the Bible, the number 7 symbolizes “Fullness, Completion and Perfection”.
